Are you sick of Krusteaz yet? Tough (non-Krusteaz) cookies if you are, because I most definitely am not.


If you're in need of a quick, filling, and tasty breakfast that happens to be seasonal, somewhat nutritious, and super easy, I suggest these pumpkin spice muffins made using Krusteaz Pumpkin Spice Muffin Mix, some roasted pumpkin seeds (from our cyclops jack-o-lantern!), and a handful of granola.

The seeds add an amazing and unexpected crunch to these perfectly spiced and moist muffins. I added the granola at the last minute and I liked the texture and flavor it contributed. If you're on top of things and make your own granola, all the better.

Seedy Pumpkin Muffins
Makes 11
Ingredients:
  • 1 box Krusteaz Pumpkin Spice Muffin Mix
  • 2/3 cup water
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 cup roasted pumpkin seeds
  • 1/2 cup homemade granola (or store bought, if you must)
Directions:
Heat oven to 400 degrees F. Lightly grease or line muffin pan with paper baking cups.
Stir together water, oil, egg, and muffin mix until moistened. Fold in the seeds and granola.
Fill muffin cups 2/3 full.
Bake 14-16 minutes, turning halfway through, or until golden brown.
Cool 5 minutes; gently loosen and remove from pan. Store cooled muffins in tightly covered container.

Your enthusiasm for Krusteaz is infectious Grace:) I must say popping those muffins in the oven couldn't be easier though. I just went to the website and the prices seem to be pretty reasonable.

Love the seeds and granola in these muffins. I bet they add a great texture, as pumpkin cake or muffins on their own can be kind of one-dimensional soft.
