Applesauce Snack Cake

Makes 12-15 servings

  • 2 cups applesauce
  • 4 tablespoons melted butter or coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1/4 cup brown sugar, firmly packed
  • 2 cups all-purpose flour
  • 1-1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chocolate chips, optional
  • 3 tablespoons coarse or granulated sugar
  • 1/2 cup chopped pecans
  • 1/2 cup chocolate chips, optional
Preheat the oven to 350 degrees F and lightly grease a 9x13-inch baking pan.
In a large bowl, whisk together the applesauce, butter or oil, eggs, vanilla, and sugars.
Add the flour, baking soda, salt, cinnamon, nutmeg and chocolate chips, if using; stir until just combined, but don't overmix.
Spread the batter evenly in the prepared pan.
Mix the topping ingredients together in a small bowl, then sprinkle them evenly across the top.
Bake for 28-30 minutes until the top springs back lightly to the touch and a toothpick inserted in the center comes out clean.
