Pound cake. Is there any dessert that equals it in its combination of ease and speed of preparation and satisfying, delicious taste? Perhaps. Perhaps not.
One of my favorite aspects of pound cake is that it's made with things any baker will most definitely have on hand. Though you do need a mixer of some sort, the whole thing comes together quickly and with minimal effort. It's highly adaptable, welcoming any flavor one might be craving, whether that be almond, chocolate, lemon, or, in this case, coconut.
Yes, this is my favorite of all pound cakes. Even without considering the flavor, the cake is not overly sweet and the crumb is perfection. Not only does it take on the coconut flavor because of the extract, but by adding shredded coconut to the batter, you're also providing an interesting element of texture to the whole cake. Coconut Sour Cream Pound Cake
Adapted from Southern Living Home Cooking Basics: A complete illustrated guide to Southern cooking
Ingredients:
- 1-1/2 cups butter, softened
- 3 cups granulated sugar
- 6 large eggs
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup shredded sweetened coconut
- 1 (8-oz.) container sour cream
- 1 teaspoon coconut extract
- 2 cups powdered sugar, sifted
- 3 tablespoons milk, more if needed
- 1 cup shredded sweetened coconut, toasted
Beat butter at medium speed with an electric mixer until creamy, about 5 minutes.
Gradually add sugar, beating at medium speed until light and fluffy.
Add eggs, 1 at a time, beating just until the yolk disappears.
Sift together flour, salt, and baking soda; mix in coconut.
Add to butter mixture alternately with sour cream, beginning and ending with flour mixture.
Beat batter at low speed just until blended after each addition.
Stir in extract.
Pour into a greased and floured 12-cup tube pan.
Bake at 325 degrees F for 1 hour and 20 minutes to 1 hour and 30 minutes or until a long wooden pick inserted in center of cake comes out clean.
Cool in pan on a wire rack 10 minutes.
Remove cake from pan, and cool completely on wire rack.
To make the glaze, add milk to the powdered sugar until proper consistency is obtained.
Drizzle over cooled cake, then top with toasted coconut.

Buttermilk biscuits would be right up there, as would pulled pork. I don't know if this is too far south, but key lime pie would probably top the list for me!

I agree with you regarding pound cake. It's easy, tasty, with ingredients you always have at home plus you can change it all the time! I love the addition of coconut and the southern dish I love is jambalaya!
Pulled pork is a definite, but whenever I think of "southern", those delicious cheese and sausage biscuits come to mind.
Another idea to bring in for the co-workers. They love to see that floral tote coming across the parking lot indicating they get treats.
As for Southern Cooking-this sounds terrible, but I miss Waffle House! Living in Minnesota, we haven't been to one in almost 15 years. Oh their waffles and hasbrowns-heaven!

I SO AGREE about pound cake--it's why I make it so often. My favorite southern dish.... turtle soup if we are counting New Orleans cooking and if not.... pulled pork for me too but depending on where you are in the south you might not approve of my sauce lol.
I quit on 666 also. The second ep I just realized I was bored senseless. I was kinda disappointed by Arrow but am not giving up yet. I forget if you watch Walking Dead but watched the premiere tonight and screamed so loud I scared my kids upstairs in bed LOL. :D

Hands down..fried chicken..just the way my mama used to make it. I've tried so hard to copy her, but to no avail.

I don't have a lot of experience with southern food. But, I had corn bread once that tasted so good! It was at a banquet, while I was on a trip to Colorado. That night, I actually went on a quest to get more cornbread.

Got it at whole foods, thinking I'm going to try one of those fancy, gluten free, sugar, flour free and taste free muffins, so I can do good for my body.

Wow! To have to pick just one Southern dish is like asking which tooth I want to keep. I love so much about Southern cooking let me just blurt out fried okra and cheese grits. It's hard to get fresh okra here in Southern Calif. so I only get to have fresh okra when I am visiting the South and boy, do I pig out when I get them. I have to say, I can't think of any type of Southern food that I don't like.
on the above coconut cake, my oh my I can't wait to make it!
