A Southern Grace: oatmeal cookies in a different form

oatmeal cookies in a different form

Yum

I like oatmeal raisin cookies--it's easy for me to convince myself that they're healthy. Plus, it seems like they're always redolent of cinnamon, which can never be bad.

What if I could have the same pseudo-health benefits and cinnamon aroma in half the time and with less than half the effort? Win-win.

It's time again for Taste & Create, the blog event in which bloggers get paired up and must make a dish from each other's recipe archives. My partner for this go-round (XVII) was Stef from Cupcake Project. I was actually paired with her once before, and I attempted to replicate her Sweet Potato Casserole Cupcakes. They were delightful, as are all of her clever and creative concoctions.

This time, I picked her Oatmeal Raisin Cupcakes with Maple Glaze. Isn't the very idea of it pure brilliance? I can't believe I haven't come across it before.

I made absolutely zero changes to her cupcake recipe, and they couldn't have come out better. I just love when the aroma of cinnamon fills my apartment. The texture of the cupcakes is quite unique, and I suspect that the vinegar has something to do with that--after all, it's not a common cupcake ingredient. They're soft and pillowy and just break down right in your mouth, but at the same time, there's a bit of a chew from the oats. Nice.

Stef used maple extract in her glaze, and instead of buying some, I used a different recipe. Although I'm sure the original glaze is good, I thought this one was completely perfect--it was extremely tempting to just take the mixing bowl and spatula, have a seat, and revel in its tastiness.

Great recipe, Stef--you're a superstar!

Yay! I'm so glad you liked them! As you already know, I loved the pancakes! I'd be happy to be your partner anytime. :)

I'd consider these cupcakes to be health food - just like I agree with you on the health benefits of oatmeal raisin cookies.

By the way, I made a chocolate chip cake this weekend that had a healthy dose of cinnamon in it and I thought of you and your love for cinnamon. I almost left it out because it didn't seem to go with the chocolate chip cake but I stuck with the recipe, in your honor and love for cinnamon, and the results were fantastic. Thanks for loving cinnamon and inspiring me to love it more. Amen.

grace, you need to come to my house to make these. Love that gooey icing down the side. Looks delicious!

I could so sink my teeth into those. They sound delicious and of course they are so healthy they are probably negative calories.

I love the topping for your cupcake. What a great recipe. Thanks for sharing.

Well, if she said it contained cinnamon, I know Grace was sold! They look really good, and of course they are healthy. Cinnamon prevents diabetes from the sugar, oatmeal prevents heart attacks from the eggs, raisins give you your fruit. Sounds very right to me.

Love the addition of maple...that icing is spoon-alicious (new word in our house, meaning you can just eat it by the spoonful).

Yes amazing that I've never seen that combo before yet it's so perfect. But you know it is healthier so I'm sticking to that story :P

If DWTS weren't on in 15 minutes, I'd be in the kitchen whipping up a batch of these bad boys. I can almost smell the cinnamon.

These sound great! I'm of the same thought that if it contains stuff like oatmeal or raisins it practically qualifies as health food :).

I love your description of the cupcakes, all fluffy and chewy at the same time. Sounds great.

And no I still have not seen any Dollhouses! It would help if I were home ever to watch tv. The shows continue to stockpile, although we did finally finish Burn Notice and Battlestar Galactica....

These are certainly healthy with all those oats. I might, but these hips don't lie! :) I'm still sad that I can no longer find that Ben and Jerry's oatmeal cookie ice cream - it was ridiculous!

Linds said...

Oh my gosh, genius! These look great and the fact that they have oatmeal in them means they could double as a breakfast treat, right ;)

I burst out laughing when I read the name of the glaze you used "maple CINNAMON". It does sound very good. I'm definitely a fan of cinnamon. Those cupcakes sound wonderful and as you mentioned healthy! Means they are okay to eat for breakfast, kinda like a breakfast bar in cupcake form, I'm thinking. :-)
