But really, it's kind of a stretch, isn't it? Except for the whole pointy-end thing.
Oh well. I've been seeing glazed acorn squash all over the place, so I decided to bake up my own. It was a good decision.
I sliced 'em up, coated them in some cinnamon-infused maple syrup (guzzle-worthy on its own, obviously), and roasted them at 400 degrees for about an hour, flipping them halfway through. The result was a sweet, smooth, succulent, and satisfying dish, made even better with a little bottle of cinnamon syrup on the side. For drizzling, of course. Not guzzling.

They're one of my favorite squash, especially with a light maple glaze (and of course cinnamon, lol!)
A favorite around here too! A little maple & cinnamon, or brown sugar, butter & cinnamon either way soo good!
I'm not a huge squash fan in general, but the first time I had it, it was slathered in butter and brown sugar.
As a good southern girl, I'm sure you know - if it's covered in butter and brown sugar, denial is impossible.

Growing up we enjoyed these at Thanksgiving! I need to eat these on days other than holidays. Why do I do that?
i've honestly never tried acorn squash. they do look just like acorns though haha i do love spaghetti squash though... and now that i think of it, the inside doesn't really look like spaghetti at all. it looks kind of like hair. haha

Never heard of acorn squash. I like the yellow squash, cooked down with sauted onions and a touch of cheese - oh yummy. The acorn squash ~ hmm, it's a little of a stretch, but I can see the resemblence!

I roasted butternut squash just last night with a little honey, butter, and cinnamon and I absolutely loved it! It's a lot like sweet potato. While I've never had acorn squash, I imagine it to be similar. Of course, let's face it, nothing really compares to a sweet potato casserole with a sugared pecan topping!
Welp! My mom would surely love to have a dish of your acorn squash. Me? they're exactly what had me sitting at the dinner table long after dinner was over, lol.

Great sauce idea! Sounds so good. It would make a stellar addition on any squash! I say that because I want to put it on my huge supply of butternut squash. HUGE.

I have a-ha moments like that all the time. And truthfully, I never even thought about the whole acorn thing, and why they are called acorn squash.

I really like how you sliced them! Um, did it require guillotine strength or just a sharp knife? :-) Love your cinnamon syrup ... I'd have to restrain myself from slurping it up all on it's own. I think I'm going to try this for my kids. Perhaps if I let them dunk it in syrup they'll oblige! YUM!

Guzzle the cinnamon syrup! What's wrong with that anyway? A day without cinnamon is sad indeed...
I've never made any kind of squash, I know my bad! But anything smothered in cinnamon , butter and maple syrup has to be good!
You need to have your own monthly cinnamon blogging event. The only requirement...cinnamon was used in the ingredients!

yeah the shape does resemble an acorn with the pointy end and all. I just tried slicing and roasting a delicata squash the other day but sprinkled spicy stuff on it - it was surprisingly good. Now I want to try the sweet version like yours!
I looove making my squashes sweet. LOL that sounds kinda funny. Anyway, I'm a huge HUGE cinnamon fan too, I always put cinnamon on anything squashy. Now maple syrup with cinnamon??? Sounds like something I've gotta try!!!

I want you to know anytime I read, hear, or see a recipe or photo that has cinnamon in it I think of you! You know what else? I think my children who I've been baking cooking for all 12 years really, really, really like desserts that include cinnamon more so than any other flavor. Weird, huh, that I just picked up on that.

When I had my wisdom teeth taken out I roasted an acorn squash and mashed it all up for something to eat for those few days. At first it was delicious then it became too sweet and now I haven't been able to go back to them...
