Ingredients:
Cookie crust:
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 1 egg
- 1-1/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 (8 ounce) package cream cheese
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Fresh fruit
- Skittles®
- 1/4 cup apricot preserves
- 1 tablespoon water
Preheat oven to 350 degrees F.
Butter a rimmed 12-inch pizza pan or 1/4 sheet pan, line with a round of parchment paper and butter parchment paper (or alternately line with foil and spray foil with non-stick cooking spray).
In a large bowl, cream together the butter and 3/4 cup sugar until smooth.
Mix in egg.
Combine the flour, cream of tartar, baking soda, and salt; beat into the creamed mixture until just blended.
Press dough into the prepared pan.
Bake for 8 to 10 minutes, or until lightly browned. Cool completely on a wire rack.
In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light and fluffy. Spread evenly on cooled crust.
Arrange fruit and candy decoratively on top of filling.
In a small bowl whisk together preserves and water. Brush mixture over fruit and candy, then serve.
