Peanut Butter Snack Cake

Serves 8-10
Ingredients:

  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1 large egg
  • 1/2 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1/4 cup vegetable oil
  • 6 tablespoons water
  • 1/2 cup creamy peanut butter
Directions:
Preheat oven to 350 degrees F.
Grease an 8-inch square pan (or something similar) and set it aside.
In a large bowl, whisk together all the dry ingredients.
In a medium bowl, whisk together all the wet ingredients.
Whisk the wet ingredients into the dry ingredients and mix until smooth, then pour the batter into the prepared pan.
Bake until the top is golden and a toothpick inserted into the center comes out clean, 35-40 minutes.
Let cool on a cooling rack.
Serve dusted with powdered sugar, if desired.
