Vietnamese coffee fudge, on the other hand, is perfect for everyone with a sweet tooth! This rich confection combines chocolate with sweetened condensed milk and a hint of coffee extract. As you may have heard, coffee brings out the very best in chocolate desserts, accentuating its flavors and bringing out nuances that otherwise might be lost!
The extract I used is Pure Coffee Extract from Nielsen-Massey. This company was founded over a century ago and makes products that are all-natural and free of gluten, allergens, and GMOs. This particular extract is carefully distilled from premium coffee beans and is easy to keep on hand, unlike ground coffee or beans, which rapidly lose their flavor.

Vietnamese Coffee Fudge

Makes 36-48 pieces
Ingredients:
Line an 8- or 9-inch square baking pan with foil.
Combine morsels and sweetened condensed milk in medium, heavy-duty saucepan. Warm over lowest possible heat, stirring until smooth.
Alternatively, microwave the morsels and milk at 50% for 15-30 seconds at a time, stirring between each heating.
Once uniformly blended, stir in the extracts and marshmallows.
Spread evenly into the prepared baking pan. Refrigerate for 2 hours or until firm.
Lift the fudge from the pan and peel off the foil. Cut into 36-48 pieces.

ReplyDeleteThe best hostess I've ever known was my long-time friend Narine from Alaska. I came to visit her several years ago and I truly enjoyed staying at her house, for many reasons. First of all, my room had plenty, and I mean plenty, of blankets and pillows, and I got to sleep in. Second, she made waffles from scratch in the morning and served them with homemade blueberry preserves. Third, we had a day full of conversation, laughter, and great food at her place. I truly enjoyed my visit with her!
ReplyDeleteMy mother was the best hostess. She was all about formalities and made sure all the guests were tended to. There were always cloth napkins and tablecloths along with lots of silver pieces. She's still alive but has dementia. I dread cleaning out her vast amount of cabinets/storage areas, because they are full of party essentials. My sister nor I have room for all of it!

ReplyDeleteI haven't had fudge in a loooooong time. I love the addition of espresso. Espresso makes chocolate taste even more chocolatey! That fudge would last -10 seconds in my house. I said -10 seconds because knowing me I would eat so much of the batter there wouldn't be anything left to make fudge WITH!

She was a gracious lady, soft spoken and well mannered who created beautiful tablescapes, served delicious food and made it look so easy. No one ever left one of her soirees without a huge smile and lots of stories to tell about the event.

From instantly making you feel welcome and at home in her house to having the most deliciously prepared foods on hand (and they are always plentiful!). The one skill of hers that I envy the most is that she incorporates all of those little touches, a fanciful twist on recipe, an artfully arranged veggy tray, a little take-home bag with recipes and samples for when you're leaving - and she makes it all look effortless!
