equal opportunity chocolate-eater

That's right--I don't discriminate. Dark, bitter, milk, semi-sweet, white, I'll devour them all. I have my preferences, of course, but who doesn't?

Behold, the Leaning Tower of Bread.

I know there are some haters out there who strongly feel that white chocolate is inedible and make a big deal about the fact that it's actually not chocolate at all. I ask them, though, does anything pair with macadamia nuts as naturally and as marvelously as chunks of white chocolate? I don't think so. Is white chocolate raspberry cheesecake not a heaven-sent creation? Indeed it is. We mustn't ignore this creamy white confection, regardless of whether or not it's inappropriately-named.


Now that I've properly praised white chocolate, I can move on to my latest concoction. I've returned once again to the recipe making use of my sourdough starter and a pudding mix. Past versions have included oreo pudding and oreo bits, coconut cream pudding with macadamia nuts and white chocolate chips, and butterscotch pudding with dried apples. I can't help myself--it's the quickest and easiest way to use a fed Eb and it offers so much in the way of possible combinations.

This time, I used some white chocolate pudding mix, macadamia nuts (even though I've already done something similar, I couldn't resist), and chocolate chips (semi-sweet, for the record, and just for the sake of those irrationally against white chocolate consumption). Soft, moist, chocolate-heavy, and with a salty crunch, this bread is everything a breakfast or even dessert loaf should be.

Whacadamia Nut (white chocolate + macadamia nut...get it?) Bread
1/2 cup oil
1/2 cup applesauce
1/2 cup milk
1 cup sourdough starter
3 eggs
1 teaspoon vanilla
1 cup sugar
2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
2 (3.4 oz) boxes instant white chocolate pudding
1 cup chopped macadamia nuts
1 cup chocolate chips

Preheat oven to 325F. Grease down whatever molds you intend to use (I filled up 8 mini loaves).
In a large bowl, mix the oil, applesauce, eggs, milk, starter, vanilla, and sugar.
In a separate bowl, combine the flour, baking powder, cinnamon, salt, baking soda, pudding mix, nuts, and chips. Add this to the liquid mixture and stir thoroughly.
Pour the batter into the prepared pans and bake until done. Apparently, this takes at least an hour for regular loaves, and took around 45 minutes for my mini loaves. Cool completely before slicing.

  1. Grace, you are really going too far ~ Sourdough bread and chocolate! Two of my favorites things... all you need to add now is a slice of sharp cheddar cheese and I am in paradise.

    Now I just have to get your 'starter kit' and I am on my way.

    I am a definite chocolate lover. True, white chocolate is more candy than chocolate, but hey, there is cacao butter in there so technically it's still chocolate, and your praise suits me fine!!

  8. Sounds like a yummy breakfast bread to me! The last time I used a pudding mix was in one of those starter breads you share with every unsuspecting, erm, friend you own and then pass it along. It makes for a VERY moist bread. Yours looks tasty and I'm with yah on getting over the whole misnomer that white chocolate is. What should we name it instead? Maybe they'll listen to us ; )

  13. I love the name - so fun and playful! I love how many sweet things you make with Eb. It gives me hopes that one day I can do a sourdough starter. At the moment though, I find it difficult to remember to water house plants with any sort of regularity.

    White chocolate is my absolute love. Other than that it's carob (which always gets an 'ew' from most folks).

  17. I happen to be a chocoholic, although I can't eat white chocolate on its own. I can eat it in other things, but milk and semi sweet chocolate are my true poison.

  18. I'm not sure about the name thing. While white chocolate doesn't have any chocolate liquor in it it does contain cocoa butter and milk solid much like milk chocolate. So it's chocolate in my book. The bread looks terrific. I now wish I hadn't given away the last of my starter.

  22. I don't eat chocolate flavored foods (like brownies), but I have rarely been known to refuse real chocolate. I believe it's part of the girl code of life that you must eat and enjoy chocolate if you aren't allergic to it.

  23. Whoa! Nothing I don't love about this bread! Chocolate, gooey and salty/crunchy. And where on earth did you find instant white chocolate pudding mix? Lord, I have GOT to start looking for something other than orange sugarless jello!

  26. I really love the white chocolate/macadamia combination! Add dried cherries into the mix and it's one of my favorite kinds of cookies! Everything about this bread sounds fantastic...I love a salty crunch with my chocolate (oooh, reminds me of chocolate-covered pretzels!).

  39. Whacadamia Nut Bread! I love it... I prefer white chocolate over dark and macadamia nuts are my all time favorite nut so I'm sure this bread is fantastic. I don't think I could trust myself alone in the house with it. :-)

    Coconut shavings I hate the texture more than anything they have to be fried at least. and white chocolate I have never had a decent white chocolate experience to me it taste like...alright not going there. But after looking at your recipe you have inspired me to give it one more shot!
