I think I've always been a fan of oatmeal scotchies, and they've had the honor of being deemed my number one cookie once or twice.

Imagine my delight when one of my favorite brands, Krusteaz, came out with an Oatmeal Scotchie cookie mix that guarantees those delicious treats on my cooling rack in very little time and with very little effort! Other new mixes include Double Peanut Butter, Brown Sugar Oatmeal, and Butter Vanilla Sugar, which I haven't tried yet but will soon. If they produce cookies anywhere near as satisfying as these oatmeal scotchies, I'll be a happy camper.

What you're seeing on this post is the mix made into bar cookies and topped with a bit of shredded coconut. They're moist yet chewy, and they have just the right amount of butterscotchiness (which is definitely a real word). This mix would make an awesome base for these yummy bars, and another way to spruce it up is to add in some instant coffee and crispy rice cereal and top with a coffee glaze. Bravo, Krusteaz!
