it just occurred to me...

...why they're called acorn squash. Sometimes I'm so oblivious, I astound myself.

(mmm...squash guts)

Duh, Grace. They resemble acorns. Get your head out of the fridge, woman!


But really, it's kind of a stretch, isn't it? Except for the whole pointy-end thing.


Oh well. I've been seeing glazed acorn squash all over the place, so I decided to bake up my own. It was a good decision.


I sliced 'em up, coated them in some cinnamon-infused maple syrup (guzzle-worthy on its own, obviously), and roasted them at 400 degrees for about an hour, flipping them halfway through. The result was a sweet, smooth, succulent, and satisfying dish, made even better with a little bottle of cinnamon syrup on the side. For drizzling, of course. Not guzzling.

  3. I'm not a huge squash fan in general, but the first time I had it, it was slathered in butter and brown sugar.

    As a good southern girl, I'm sure you know - if it's covered in butter and brown sugar, denial is impossible.

  8. i've honestly never tried acorn squash. they do look just like acorns though haha i do love spaghetti squash though... and now that i think of it, the inside doesn't really look like spaghetti at all. it looks kind of like hair. haha

  11. Never heard of acorn squash. I like the yellow squash, cooked down with sauted onions and a touch of cheese - oh yummy. The acorn squash ~ hmm, it's a little of a stretch, but I can see the resemblence!

  15. I roasted butternut squash just last night with a little honey, butter, and cinnamon and I absolutely loved it! It's a lot like sweet potato. While I've never had acorn squash, I imagine it to be similar. Of course, let's face it, nothing really compares to a sweet potato casserole with a sugared pecan topping!

  18. Great sauce idea! Sounds so good. It would make a stellar addition on any squash! I say that because I want to put it on my huge supply of butternut squash. HUGE.

  24. I really like how you sliced them! Um, did it require guillotine strength or just a sharp knife? :-) Love your cinnamon syrup ... I'd have to restrain myself from slurping it up all on it's own. I think I'm going to try this for my kids. Perhaps if I let them dunk it in syrup they'll oblige! YUM!

  39. yeah the shape does resemble an acorn with the pointy end and all. I just tried slicing and roasting a delicata squash the other day but sprinkled spicy stuff on it - it was surprisingly good. Now I want to try the sweet version like yours!

  45. LOL! That's sounds good AND easy.

    I want you to know anytime I read, hear, or see a recipe or photo that has cinnamon in it I think of you! You know what else? I think my children who I've been baking cooking for all 12 years really, really, really like desserts that include cinnamon more so than any other flavor. Weird, huh, that I just picked up on that.

  47. When I had my wisdom teeth taken out I roasted an acorn squash and mashed it all up for something to eat for those few days. At first it was delicious then it became too sweet and now I haven't been able to go back to them...
