(mmm...squash guts)
Duh, Grace. They resemble acorns. Get your head out of the fridge, woman!
But really, it's kind of a stretch, isn't it? Except for the whole pointy-end thing.
Oh well. I've been seeing glazed acorn squash all over the place, so I decided to bake up my own. It was a good decision.
I sliced 'em up, coated them in some cinnamon-infused maple syrup (guzzle-worthy on its own, obviously), and roasted them at 400 degrees for about an hour, flipping them halfway through. The result was a sweet, smooth, succulent, and satisfying dish, made even better with a little bottle of cinnamon syrup on the side. For drizzling, of course. Not guzzling.
They're one of my favorite squash, especially with a light maple glaze (and of course cinnamon, lol!)
ReplyDeleteA favorite around here too! A little maple & cinnamon, or brown sugar, butter & cinnamon either way soo good!
ReplyDeleteI'm not a huge squash fan in general, but the first time I had it, it was slathered in butter and brown sugar.
ReplyDeleteAs a good southern girl, I'm sure you know - if it's covered in butter and brown sugar, denial is impossible.
Oh I've got an acorn squash & some cinnamon infused maple syrup...guess I know what I'm doing
ReplyDeleteI love the samde dish with ginger but cinnamon would be equally good:D
ReplyDeleteDelicious looking roasted squash!
ReplyDeleteGrowing up we enjoyed these at Thanksgiving! I need to eat these on days other than holidays. Why do I do that?
ReplyDeletei've honestly never tried acorn squash. they do look just like acorns though haha i do love spaghetti squash though... and now that i think of it, the inside doesn't really look like spaghetti at all. it looks kind of like hair. haha
ReplyDeleteI love acorn squash, especially with cinnamon and maple. Yum!
ReplyDeletePerfect for fall!!
ReplyDeleteDid you say cinnamon-infused maple syrup? Sounds great! Did you buy this, or make it yourself (the syrup, that is)?
ReplyDeleteNever heard of acorn squash. I like the yellow squash, cooked down with sauted onions and a touch of cheese - oh yummy. The acorn squash ~ hmm, it's a little of a stretch, but I can see the resemblence!
ReplyDeleteIsn't it wonderful? I love it. Try sage and browned butter. TDF!
ReplyDeletewould you feel all warm & fuzzy if they called them "banjo squash"? lol
ReplyDeleteI heart those squash rings of spicy goodness.
This looks tasty. I've never added maple syrup to my squash...will be trying it soon.
ReplyDeleteI roasted butternut squash just last night with a little honey, butter, and cinnamon and I absolutely loved it! It's a lot like sweet potato. While I've never had acorn squash, I imagine it to be similar. Of course, let's face it, nothing really compares to a sweet potato casserole with a sugared pecan topping!
ReplyDeleteWelp! My mom would surely love to have a dish of your acorn squash. Me? they're exactly what had me sitting at the dinner table long after dinner was over, lol.
ReplyDeleteI don't love acorn squash but maybe I haven't had the right one.
ReplyDeleteGreat sauce idea! Sounds so good. It would make a stellar addition on any squash! I say that because I want to put it on my huge supply of butternut squash. HUGE.
ReplyDeleteOkay, now I am loving the cinnamon-maple glaze and will definitely be trying this with my next acorn squash.
ReplyDeleteI started having these now but the thought of cinnamon nope but otherwise I love this...
ReplyDeleteSo how on earth do yo stop hourself frim guzzling the cinnamon maple syrup?! I love these squashes but agree they are not exactly dead ringers for acorns. Still, they are deilcious :)
ReplyDeleteI have a-ha moments like that all the time. And truthfully, I never even thought about the whole acorn thing, and why they are called acorn squash.
ReplyDeleteare you sure about the no guzzling? it sounds like such a good idea!!
ReplyDeleteI really like how you sliced them! Um, did it require guillotine strength or just a sharp knife? :-) Love your cinnamon syrup ... I'd have to restrain myself from slurping it up all on it's own. I think I'm going to try this for my kids. Perhaps if I let them dunk it in syrup they'll oblige! YUM!
ReplyDeleteI've been trying to use more than just butternut squash. Thanks for the inspiration to branch out:)
ReplyDeleteI've never seen a squash like this in Australia, it looks very cute! Haha and of course I knew you'd find a good way to add cinnamon ;)
ReplyDeleteGuzzle the cinnamon syrup! What's wrong with that anyway? A day without cinnamon is sad indeed...
ReplyDeleteI've never made any kind of squash, I know my bad! But anything smothered in cinnamon , butter and maple syrup has to be good!
ReplyDeleteYou need to have your own monthly cinnamon blogging event. The only requirement...cinnamon was used in the ingredients!
ReplyDeleteThis is a great way to get me to use these more. Especially with the guzzle-worthy syrup!
ReplyDeleteUh, count me as #2 who never put the acorn with the squash. Sometimes I'm slow.
ReplyDeleteCan we be cinnamon sisters? I'm not sure what that means but I think you're the only person I've met that loves cinnamon as much as me.
Yummy looking squash, Grace! I should cook it more often.
ReplyDeletehaven't baked acorn squash yet, is it like butternut? I am a butternut freak.
ReplyDeleteI love acorn squash! That looks like some good eatin'.
ReplyDeleteYum!
ReplyDeleteI also like my acorn squash grilled with a little brush of brown sugar.
I adore squash and what a delicious looking roasted squash!
ReplyDeleteRosie x
Acorn squash is my favorite. Yours looks terrific!
ReplyDeletei left ya somethin on my blog today
ReplyDeleteyeah the shape does resemble an acorn with the pointy end and all. I just tried slicing and roasting a delicata squash the other day but sprinkled spicy stuff on it - it was surprisingly good. Now I want to try the sweet version like yours!
ReplyDeleteI looove making my squashes sweet. LOL that sounds kinda funny. Anyway, I'm a huge HUGE cinnamon fan too, I always put cinnamon on anything squashy. Now maple syrup with cinnamon??? Sounds like something I've gotta try!!!
ReplyDeleteOhh, looks so good. And, um, I'm a little slow too, I never have really put the acorn and squash thing together before either.
ReplyDeleteOk, I'm sitting in a hotel room and really want some homecooked food right about now!! Especially if it has cinnamon... one of my fav flavors!! :)
did you bake your seeds? i did mine from my pumpkins this year, with chili powder, just like we used to do in foxridge . . . sigh
ReplyDelete"cinnamon-infused maple syrup"... Why have I never thought of that? :)
ReplyDeleteWoo Hoo - I have one in my fridge and was just thinking about what to do with it. Cinnamon - now there's a huge surprise. Maple syrup - check - that would be amazing.
ReplyDeleteLOL! That's sounds good AND easy.
ReplyDeleteI want you to know anytime I read, hear, or see a recipe or photo that has cinnamon in it I think of you! You know what else? I think my children who I've been baking cooking for all 12 years really, really, really like desserts that include cinnamon more so than any other flavor. Weird, huh, that I just picked up on that.

That squash sounds so good, especially with the syrup you used.
ReplyDeleteWhen I had my wisdom teeth taken out I roasted an acorn squash and mashed it all up for something to eat for those few days. At first it was delicious then it became too sweet and now I haven't been able to go back to them...
ReplyDeleteI want some cinnamon-infused maple syrup on my oatmeal right now! Thanks for the link. :)
ReplyDeleteThat is a darn good point, they do look like acorns! Love the recipe, sounds like dessert to me!
