100th post! (and ee#13)

Well, how about that--100 posts. Whodathunkit?


And on National Peanut Butter Lover's Day, no less. Woobly-hoo!

In celebration, I've made some cookies. I hesitate to call them an epicurean endeavor because they were so stinkin' easy. The sad truth, dear readers, is that I morph into a sloth on the weekends. Lazy recipes are good.

These have been titled "Healthy No-Bake Cookies" by the gal who concocted the recipe.


I found it because I was looking for some way to incorporate peanut butter and wheat germ into a dessert. I've had this wheat germ in my fridge for awhile, and I need to be using it more often before it goes rancid.


Bonus--the recipe called for ground flax seed, which has also been collecting dust in my fridge. (Is there really dust in my fridge? Of course not. Don't get your panties in a twist.) I tossed in some coconut and cinnamon just for kicks.

Quick, easy, healthy, delicious. Sign me up.


Healthy No-Bake Cookies
1/2 cup milk
2/3 cup sugar
2 tablespoons cocoa
2 teaspoons vanilla
2/3 cup peanut butter (crunchy for me!!)
1/4 cup wheat germ
1 tablespoon ground flax seed
2 cups oats
1/2 cup coconut
pinch o' cinnamon

Combine milk, sugar, and cocoa in small saucepan. Heat until a boil is reached. Stir in peanut butter and continue stirring until melted. Remove from heat and stir in vanilla and cinnamon. After mixing well, stir in oats, wheat germ, flax seed, and coconut. When combined, drop spoonfuls onto wax paper and let cool.


Nah, you don't really need to let them cool. Eat 'em warm. The one above has a coconut tail. I ate him first.

I made traditional no-bake cookies one time, and hated them. These look good, though. I love peanut butter. Especially with a coconut tail.
