I love corn. I love it on the cob, in salads, in Mexican dishes, in the form of popcorn, and on it goes. What I don't love is when the kernels firmly lodge themselves between my teeth.

Definitely worth a look, wouldn't you say? Especially if you're a brand loyalist and hate dealing with crowded stores! Now, because this is a food blog, I give you my recipe for homemade creamed corn. It's spicy and sweet and pretty and delicious. Happy eating and happy shopping!

Creamy Creamed Confetti Corn
Makes 6 to 8 servings
Ingredients:
  • 8 bacon slices, chopped
  • 4 cups sweet corn kernels
  • 1 onion, chopped
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped green pepper
  • 8 ounces cream cheese, cubed
  • 1/2 cup milk or half-and-half
  • 1 tablespoon granulated sugar
  • Salt and pepper, to taste
Directions:
Cook the chopped bacon in a large skillet until crisp, then remove and drain it, reserving 2 tablespoons of the drippings in the skillet. Set bacon aside.
Saute corn, onion, and peppers in drippings over medium-high heat for about 6 minutes or until tender.
Add cream cheese and milk, stirring until cream cheese melts.
Stir in sugar, salt, and pepper.
Top with reserved bacon.
